CHICKEN SALAD WITH PRUNES AND WALNUTS

    Salad with chicken, prunes and walnuts is a recipe for a layered salad that looks beautiful, hearty and is usually enjoyed by all guests. You can lay out the salad simply in a salad bowl, but it will look much neater and more dressed up with a cooking ring.

 


 

   Ingredients for 6 servings:

- Chicken fillet - 250 g.

- Prunes (pitted) - 150 g.

- Hard cheese - 70 g.

- Walnuts - 50 g.

- Eggs (large) - 2 pcs.

- Apples (sour-sweet) - 1 pc.

- Mayonnaise - 70 g.

   Step by step cooking

   1. Pour about 1,5 liters of water in a pot. When it boils, salt it (about 0,5 tbsp. salt) and put the chicken there. For taste, you can add black pepper (3-4 pcs.) and bay leaf. Cook over low heat under a lid until tender (about 20 minutes after boiling). If fillet can be easily pierced with a knife, it means it's ready. Let cool without taking it out of the broth, so the meat does not dry out. Slice into small pieces.

   2. Boil hard-boiled eggs (after boiling for 8-10 minutes). Pour cold water and cool. Peel the shells and finely chop them.

   3. Wash the prunes and cut them into small pieces. If he is dry and tough, pre-pour boiling water over it and leave for 10 minutes. Then drain the water, dry the fruit with paper towels and finely chop it. Also finely chop peeled walnuts with a knife.

   4. Wash and peel an apple of medium size, then peel and dry it. Grate it on a coarse grater. Grate the hard cheese on a medium sized grater. Put all the ingredients in separate containers.

   5. Place on a flat plate with a cooking ring (about 18 cm in diameter). Place the fillets in the first layer, brush with mayonnaise. The second layer evenly distribute prunes. Again, put mayonnaise. Then eggs and mayonnaise. Apple - mayonnaise. Cheese - mayonnaise. Sprinkle the salad with chopped nuts on top. Mayonnaise can be transferred to a culinary bag and apply a mayonnaise net to each layer.

   6. Before serving, place the salad in the refrigerator for 1 hour to soak. Then carefully remove the cooking ring so as not to ruin the structure. You can decorate with fresh greens (dill, parsley), dried fruits. Bon appetit!
