COUSCOUS SALAD WITH FRESH CUCUMBERS, BELL PEPPERS AND OLIVES

   Couscous is the best solution if you need a quick snack or an instant side dish. This grits is better than any instant mixes in taste and nutrition.

Ingredients for 3 servings:

    - 150 g couscous;

    - 150 g feta cheese;

    - 100 g of olives;

    - two small cucumbers;

    - One small sweet bell pepper (kapi can be used);

    - Two tablespoons of olive oil;

    - two sprigs of mint;

    - salt and pepper to taste.

Step-by-step preparation:

Cooking Time: 25 min

   1. Put the couscous in a deep bowl, add a pinch of salt and 1 tbsp. olive oil.

    2. Mix with a fork and pour 1:1 boiling water, cover and let stand for 5 minutes. Stir again with a fork so that the grains do not stick together. Do not increase the time to obtain crumbly couscous.

   3. Prepare the vegetables for the salad. Cut the peppers and two cucumbers into small cubes. If the cucumber has a hard skin, peel it.

    4. Cut the feta cheese into large cubes.

    5. Mix the steamed couscous, chopped peppers, cucumbers, and mint leaves from two sprigs in a salad bowl or deep bowl.

    6. Season with 1 tbsp olive oil and season to taste with salt and ground black pepper. Serve immediately to the table.
